Though it is more something of a story of desert survival turned into royal luxury with the famed use of Ghee (clarified butter) and a bold, spicy flavour profile.

Because fresh vegetables and water were historically scarce in the Thar Desert, the food evolved to be hearty, with a long shelf life, and incredibly rich – with a lot of Ghee.
This is one thing we really notice as visitors! The desert dishes in Bikaner are elevated by a generous (very generous) use of pure Ghee. Well, that and more incredible spices.

You cannot talk about the famous food of Bikaner without mentioning Bhujia. This crispy, savoury snack is made from moth dal (a local bean) and a specific blend of desert spices.
While you can find Bhujia all over the world now, the local version is prized for the unique mineral content of Bikaner’s water and the extreme dryness of the air, which gives it a legendary crunch.
- The Experience: Head to the shops near Kote Gate and buy it fresh. It’s light, crunchy, and has a slow-burning spice that makes it dangerously addictive.
- Where to find it: Bhikharam Chandmal or Bishamberlal Bhujiawala.

2. Camel Milk Ice Cream
Bikaner is home to Asia’s largest camel research farm, and they’ve put the milk to very delicious use. Camel milk is slightly saltier than cow’s milk and is packed with nutrients.
- The Experience: In the desert heat, a scoop of camel milk ice cream is a life-saver. It’s creamy, unique, and surprisingly refreshing.
- Where to find it: The National Research Centre on Camel (about 8km outside the city). Try the kulfi or the chocolate flavour!

3. Rajasthani Chai
In Bikaner, the tea is brewed strong, heavy on the ginger and cardamom, and usually served in a Kulhad (a disposable clay cup).
- The Experience: There is something about the earthy, dusty scent of the clay cup that perfectly complements the spicy tea. It is the best way to start a desert morning.
- Where to find it: Any small stall near the Railway Station or Kote Gate early in the morning.

- By Train: Bikaner is well-connected to Delhi, Jaipur, and Jodhpur.
- By Bus: As we’ve mentioned in our other guides, the Jaisalmer to Bikaner bus is a great way to traverse the desert. Private AC sleeper buses are frequent and affordable.
Getting Around in Bikaner
- Auto-Rickshaws: These are the primary way to get around. Note that rickshaws are the only vehicles that can navigate the narrow, food-filled streets of the Old City. Always agree on a price before starting your journey.
- Walking: The Old City is best explored on foot. It’s the only way to stumble upon the tiny street food gems that aren’t on the maps!
